For those of you new to my blog, I thought I should let you know what my mission is. I am working my way through Rachael Ray's 365: No Repeats cookbook. It is my goal over time to prepare all of the recipes in this book. At the pace I am going, it may take me 5 years, but I am practical enough to realize that there is no way that I can cook every single night of the week, as well as purchase all the ingredients for every recipe every night and still keep up the mortgage payments! Recipe 188
Involtini all'Enotec'Antica with Gnocchi
Matt rating **** (***** for me!)

Ingredients used:

Ground sirloin
Parmigiano-Reggiano
Flat-leaf parsley
Basil leaves
Garlic
Egg
Italian-style breadcrumbs
S&P
EVOO
Unsalted butter
Flour
Dry red wine
Beef stock
Tomato sauce
Radicchio leaves
Gnocchi

I am not sure how this title is translated, but these were meatballs stuffed in radicchio leaves and covered in a delicious sauce. I added a bed of polenta for the stuffed leaves alongside of the gnocchi and it was a delicious and rich dish that melted in my mouth...it's making my mouth water now just writing about it! Definitely a favorite of mine now!
